The sultanas are produced from a variety of seedless grapes which are dried to concentrate their rich flavour. The sultana was first introduced to Europe by the Ottoman traders. The name "Sultana" comes from the word "Sultan" and it is well know that the humble grape had been decorating the Ottoman tables for many years and had been served to Sultans as a healthy treat.

In accordance to the Turkish Standards TS 3411 the grading of the sultana is done by number coding, which is based on the colour of the berry. The Sultana berry is classified into five Types and which 7, 8, 9, 10, 11. The colour coding starts with 7 which is given to the darkest of the berries and goes up to 11 which is allocated to the lighter coloured berries.
